Jesus Olivares is the Executive Chef at Via Real Restaurant in Las Colinas. His culinary career began, as many do, in the dish pit of a restaurant. It was there that he knew that the restaurant industry was the place for him. Through hard work and a passion for food and service, he quickly moved up the ranks with gained experience in everything from sports bars to steakhouses, casual, and fine dining.
In 2010, he was named Executive Chef of Via Real and has continued to strengthen his team and wow each guest with his innovative and appetizing dishes. As a founding member of the International Culinary Fellowship, his goals are to gain knowledge, share experience, and mentorship with up and coming Chefs that hold the same love and dedication in the culinary arts.
He is married and the father of two beautiful children. His friends and family always look forward to the time spent around his table. It is there that the best memories are made.
